they ARE cold blooded. You can take off with the choke out, yes. I always do and end up pushing it back in within a mile. Not only will coming from EFI make it seem strange, but they may also be more cold blooded than many other carb bikes. I live in a very warm climate and i have slight issues starting cold, so if u are in a cold state it will be a lot worse even.
