gettin busy on the bonnie!

Well, so far i've done the bafflectomy, removed the AI, put fork gaiters on her, striped the tank and fender, put vintage kneepads on her, and installed Triumph bar end mirrors on my 2006 Bonnie.(110 bucks a set, OUCH!) I have some 112 mains i'm going to install, but i'm waiting for the "d" tool and stainless carb bolt set from newbonneville before i do that. im really happy with the way she's shaping up, but i'm paranoid that she may be running to lean. It popped a very little bit on decelleration after i removed the rear baffles, but not at all since removing the AI. Is there any signs i should be aware of to indicate too lean a mixture? will my engine blow up?? aaaggghh! The only thing i've noticed is that there is a little hesitation and mild pinging when easing off the clutch and accelerating into first gear (maybe that's just my poor clutching technique!) and when i let it idle too much in stop and go traffic and it gets hot, i can hear a bit of a clacking sound (valves?) Any advice/comforting words would be appreciated. I've never owned a new bike so i'm being a bit precious...
