I'm in LA, but I can be of support.
I would suggest listing what you plan on doing, and buying the jets recommended. While you are there, buy the next two higher and lower sizes of mains, and the next 1 up and down for the pilots. That way you will have them when you take the bike apart. Tuning is constant adjusting until you find what works, and every bike is just slightly different.
