A local brake disk manufacturer told me that the standard stainless rotors are designed not to rust and therefore look good, but have a problem with annealing. This is basically that if they are hot from heavy braking and are cooled rapidly - like hitting a puddle, the metal that is cooled will harden - permanently, a may warp.
So the message is:
If you ride in the rain, don't use your brakes!
