I have always held the bike vertical with the rear wheel off the ground to measure and adjust the chain. Having said that, if it became necessary to adjust the chain on the road, I wouldn't have a problem doing it on the sidestand.

I seem to recall replacing the chain block is easy enough once the front sprocket cover and the chain is removed. Provided the bike is vertical I didn't need to drain the oil either.
