You are off to a rough start. ***** in the tank or bad gas, they should have run this through and made sure there was a good ride in before turning it back.
If its one of those things that comes and goes, they need to look deeper, as in electrics/airflow/carb setup. Have they had a chance to start the bike cold?
Have they had their hands on it when it was running poorly? They may suspect you have buyers remorse, and are exaggerating the condition.
Have you been given the opportunity to speak directly with the mechanic? Some service managers shield their mechanics, so you have to push your way back. Hopefully this is not the case, since you say they seem to have a good rep.
