Would the bike die below 2000 rpm? If so the problem is almost certainly a blocked pilot jet. As far as overheating goes, the blocked jet would of course not cause this but idleing or traveling slowly for a long period of time at over 2000rpm will certaily cause this, especially if your fan doesn't come on.
