Not to cause a panic, but you may want to have your cooling system checked.
When I was riding my '02 Daytona, it had the same cooling problem right out of the crate.
The mechanic had to bleed a bubble out of the system, after that it was around 180 most of the time. 200 in the city. 170 on the highway.
