Just an update.
On the overheating, the shop called Triumph tech support (US). Once they found out how many miles my bike had (8600 +/-) they said it was probably caused by a malformed thermostat housing. They sent a new one (warranty) and when the old one was removed, the tech could see some evidence of warping. Also, the rad cap was bad, which seemed to be caused but the warped housing (it chewed up the rubber gasket on the cap) The bike has been perfect ever since, no more coolant overflow, no high temp readings etc. Seems like this might be a somewhat common issue.
So if you have an '05 and you get close to 8000 miles, keep an eye on the overflow tank.
BTW - The Pilot Roads and Hagon front springs make the Tiger a MUCH nicer riding bike!!! I highly recommend both upgrades!!!
