Stainless Steel Carb Screws! ($6)
Don't rejet without them! The stock screws suck!
The AI is not as big a deal on the cruisers because of the double walled pipes, but it's cheap ($20) and easy to remove, will save a pound or two in weight, and you can get to your plugs easier. However, it will polute the enviorment more. It's your call.
You have pipes and jets on the way, a UNI filter is fairly cheap ($30), and pulling the snork is free.

And like Satxron said, an 18t sprocket may also fit you better depending on how you ride. That's also a cheap mod ($20)
