I don't like touring in leather, too chilly in the cold and too warm in the hot and not flexible to change, trying to get them off at the end of a hot day is grim and only out matched by putting them back on still damp the next day. I'd go for textile if I were you with a ventilated jacket and trousers. I find the Hein Gericke Tuareg suit the best for flexibility(BMW do a similar good suit which you would have seen on The Long Way Round)), the lining is the thermal and waterproof part, take it out and the outer is light with plenty of zip ventilation and lots of straps to reduce or increase bulk when requiring additional layers. The benefit in the lining having the Goretex membrane is that when it is warm and you remove it the shell is breathable. I have a great Dainese jacket which I wear in the winter but I don't like in the heat because if you take out the thermal lining the Goretex membrane is still in the outer and although the shell is light weight you still get extremely hot because it seems to keep the perspiration moisture inside the jacket. The downside of course is that if the Goretex is in the lining the shell gets wet, but personally I don't find it a problem if you take a light weight rain suit. Under the suit I wear hillwalking layers designed to keep warm or wick away moisture. I also take my Klan heated waistcoat which means you can quickly put it on if temperature is dropping as it does very quickly with increase in altitude. Boots, again I use a pair of Hein Gericke Goretex boots which are lace up with a zip cover they also only come up mid shin which make them comfortable on the bike and off, you can spend a lot of time in your bike clothes on a trip so I want to be as comfortable as possible for all occasions.
