a few tips:

buy new gaskets
drain the oil

clutch cover:
-take off shifter lever
-remove all bolts
-be careful not to lose the "wavy washer" on the starter motor shaft (looks like a bent up washer)

alt cover:
-remove all bolts
-pull hard, but not too hard, the magnet/rotor/etc is holding the cover to the motor

cam cover:
-remove seat, gas tank
-remove 4 bolts that hold the cam cover on
-you might have to use a rubber mallet to tap (did I say tap?) the cover lightly side to side to loosen the seal
-lift it off, carefully, it's easier to remove it from the brake side of the bike.
-do not drop anything down into the motor!!!!

There's more to it than all that, but that will get you started. If you're going to PC those parts, you'll also have to remove all the little gaskets/washers/etc and also the alt coil. The Haynes should be able to help you there.
